I'm experimenting with both. Both suck with stagger but I like the counter and reach with the estoc. But I think it's just not enough. What's the appeal of the uchi? Strength based weapons seem to do just as much damage but with higher poise stagger...My guess is that the tracking somehow favors stabby weapons in laggy conditions, this doesn't apply just to Estoc but Rapier too.
